Maust o Khiar
Mixture of plain yogurt and chopped cucumber, flavored with mint.
How it is made
Thick yogurt, Persian cucumber diced small, dried mint rubbed in by hand, a little salt. Some kitchens add walnuts or raisins; Darband keeps it plain so it can sit beside a kabob without arguing.
It is the cold thing on the table that makes the hot things taste better. Spoon it over rice, or scoop it with lavash while the skewers are on the fire.
