Chicken Barg
Thick strips of marinated chicken breast, charbroiled and served with basmati rice and a charbroiled tomato.
How it is made
Barg means leaf. The chicken breast is butterflied and cut into long thick strips, then marinated in saffron, lemon, yogurt and onion so it stays moist over the fire.
The strips are laid flat on wide skewers and charbroiled quickly so the outside colors and the inside stays juicy.
Served over basmati rice with a charbroiled tomato. It is the chicken plate for guests who want the full grill flavor without the bone.
