Shishlik Lamb Rack Kabob
Baby lamb chops on the bone, marinated, skewered and charbroiled.
How it is made
Shishlik is lamb rack cooked the Persian way: the chops are left on the bone, marinated in onion, saffron and lemon, then threaded onto skewers so the meat cooks over direct flame with the bone protecting it.
The fat on the edge of each chop crisps and the meat stays rosy. It is the plate to order when you want to eat with your hands.
Served with basmati rice and a charbroiled tomato. A squeeze of lemon over the top is not optional.
