Faloodeh
Rosewater and starch.
How it is made
Faloodeh is a frozen dessert from Shiraz that is older than ice cream: thin starch noodles in a rosewater syrup, frozen to a slush, served with lime juice or sour cherry syrup over the top.
It is cold, sour and floral at the same time. Order it after a kabob plate; there is nothing better for cutting through saffron and char.
