Rice flour cooked with milk, rosewater and sugar, chilled and finished with pistachio.
How it is made
Ferani is rice flour cooked slowly with milk, sugar and rosewater until it sets into something between a custard and a pudding, then chilled and finished with chopped pistachio.
It is the dessert Iranian families make for someone who is unwell, and the one everybody else eats anyway. Lighter than sholeh zard, and the rosewater sits right behind the milk.
Order it with black tea.
