Fluffy Basmati Rice
How it is made
The rice under every kabob at Darband is basmati, soaked, parboiled, drained and steamed again over a little oil until every grain stands apart. A ladle of rice tinted with saffron goes over the top.
If there is a golden crust on the plate, that is tahdig, the layer from the bottom of the pot. People ask for it by name.
Reviewers call this rice buttery. It is the reason the plates are heavy.
