Ghormeh Sabzi Pizza
The most unique Persian stew, Persian style.
How it is made
Ghormeh sabzi is the most famous stew in Iran: parsley, cilantro, chives and fenugreek fried down until dark, simmered for hours with beef, red kidney beans and dried limes. Here it goes on a pizza crust under mozzarella, where the tomato sauce would be.
You can see the beans and the herbs through the cheese. It sounds like a joke until you taste it, and it is the reason half the tables order a pizza they did not come in for.
