Khoresh Gheimeh
Sautéed beef, yellow peas, sun-dried limes and special tomato paste, lightly spiced to perfection, served with basmati rice.
How it is made
Gheimeh is beef and yellow split peas simmered for hours with sun-dried limes and tomato paste until the peas are soft and the sauce is thick. The dried limes give it the sour note that is the whole point.
It is finished with a handful of crisp fried potato straws over the top and served beside saffron basmati rice. Spoon the stew over the rice, not the other way around.
Gheimeh Bademjan is the same stew with fried eggplant folded in.
