Makhloot
Combination of Persian ice cream and faloodeh, with sour cherry syrup and pistachio.
How it is made
Makhloot means mixed: a scoop of Persian saffron and rosewater ice cream beside a mound of faloodeh, the frozen rice-starch noodles from Shiraz, with sour cherry syrup poured over the top and pistachio scattered.
Cold, floral and sour at once, and it does more for a table that has just finished a kabob plate than anything else on the page.
Ask for extra lime if you want it sharper.
