The jeweled rice · Rice Dishes
Zereshk Polo
Fresh barberries and saffron mixed with basmati rice.
How it is made
Basmati rice steamed with saffron and finished with zereshk, the small sour barberries that give the dish its name, fried briefly in butter and a little sugar so they shine.
It is the rice Persian families make for weddings and holidays. At Darband it comes on its own or under baked chicken, on the stews page.
