Shish Kabob and Koobideh
A combination of one skewer of juicy chunks of filet mignon and ground sirloin, served with basmati rice and charbroiled tomato.
How it is made
One skewer of chunks of filet mignon and one strip of hand-pressed koobideh on the same bed of saffron basmati rice, with a charbroiled tomato. The two most ordered kabobs in Persian cooking on one plate.
The filet is marinated in onion and saffron and charbroiled to pink; the koobideh chars on the outside and stays soft inside. Press the tomato into the rice and eat both with a spoon of maust o moosier.
